Tuna Egg Cups

2 cans tuna, drained
4 eggs
2 oz cheese, cubed [eg feta, cheddar, jack]
2 t. olive oil [plus enough to grease muffin tin]
Seasoning, I used some herbal salt substitute I had on hand

Mix all ingredients in medium bowl. Spoon into 6 large, greased muffin cups. Bake at 375°F for 30-40 minutes until set and lightly browned on the edges.
