Leftovers Frittata

One of my favourite recipes for using up stuff in the fridge. It's never the same twice. For good or for bad. This rendition included leftover salmon.

2 T. olive oil
1/2 red bell pepper, chopped
1 onion, small, finely chopped 
4 garlic cloves, finely chopped
1/2 C. mushrooms, chopped
1 C. cauliflower, cooked, chopped
1 C. salmon, cooked
8 large eggs
Salt and pepper
2 C. cheese, grated
Substitute wildly!

Preheat oven 350 F°. In the oil, sauté onion, garlic about 5 minutes. Add mushrooms and red pepper and sauté another few minutes. Add cauliflower and salmon. Remove from heat and place in pie plate.

Whisk eggs, salt, and pepper together and pour over sautéd concoction. Sprinkle with cheese. Bake until done (20 – 30 minutes). Eggs are really no good runny or overdone and since every oven is different it's worth it to check in on its progress during the cooking time often.
