Dutch Oven Bacon Sage Potatoes

This recipe makes a hearty camping breakfast when served with eggs. Or serve it as a side dish for dinner.

4 Potatoes, cut into bite-sized pieces
1 Yam, cut into bite-sized pieces
2 onions, cut into wedges
12 slices bacon
S + P
Sage, fresh, chopped

Place the dutch oven on 16 coals. Slice bacon into small pieces and fry in the bottom of the dutch oven until about half way done. Place the potatoes, yams, and onions on top of the bacon. Season. Place on lid with 8 coals. Cooking time is about 45 minutes. Every 15 minutes rotate the lid to reduce the likelihood of a hot spots. Check halfway through to make sure it's not burning at the bottom. Before serving, stir in the sage.
