Today's Lunch: Gluten-Free Pancake Sandwich is the Star
I'm always on the hunt for grain-free or at least gluten-free ideas for lunches that are still satisfying for our gluten-worshipping boy (he really LOVES his bread ... and pasta ... and all things wheat-y). I was happy that Hubs made extra gluten-free pancakes on the weekend; for lunch I made a jam sandwich from a couple of them. My preference would be to add some almond butter to the mix but that has to be reserved for after school snacks since our school is religiously nut-free.

Lunch Today: Mini Quiche
I don't know what came over me but I actually made these this morning! Six eggs, 1 cup of shredded cheese, 3/4 cup of chopped ham, mix, pour in muffin tin, and bake 15 minutes in 350° F oven. That's it! I would have thrown in a veg if I had leftovers too. Also, one should grease the muffin tin for easier removal. Next time.
This made 8 mini crustless quiches; 2 went in the freezer for a future easy lunch and 4 went in the fridge for an upcoming breaky and a snack.

Lunch Today: Mini Strawberry Cheesecakes
I used the leftover cream cheese from yesterday's wafflewich where I sweetened the cream cheese with maple syrup. After dipping these locally grown beauties from the farmers market into the cream cheese mixture, I dipped them in cookie crumbs I made from digestives.
This treat (inspired by momables) is accompanying a thermos of leftover butter chicken and rice.

Valentine Lunch: Shot through the Heart
Happy Valentine's Day everyone!
· Wieners cut and skewered with dry pasta into heart shapes plus cheddar arrowheads and feathers
· 2 small cheese hearts
· Grape tomatoes cut and skewered into heart shapes including cheddar arrowheads
· Underneath is a heart shaped cucumber piece and a big cupcake

Bento: Cylindrical Rice Mold
Haven't used this rice mold in forever! I made these little 1" cylinders last night with the leftover brown rice from Spud's dinner. They were a bit loose at first but an overnight in the fridge made them more stable. By packing things around them I'm hoping they won't get jostled too much. I packed a spoon just in case.

Lunch With Leftovers
Today's lunch making was a snap. I boiled a bunch of eggs on the weekend and tossed a couple into molds after peeling. We also BBQ'd a whack of sausage to have leftovers for lunch. Add the fruit + veg category ... done.

Rice Balls for Lunch
In an attempt to reduce the amount of bread in my kid's lunches I've busted out our rice ball mold. Had to dust it off actually because it's been awhile. First I tried making them with a little canned salmon in the middle, seasoned with a splash of soy sauce and a bit of sesame oil (not too much or the liquid will make the ball fall apart). They were a hit! I gave Spud 2 in his lunch on Monday and he said he wished there were 5!
Today I tried it with meatball. I took one small leftover meatball and quartered it. Then I added warmed leftover Japanese short grain rice to the bottom of the mold (cold rice doesn't work as well). Popped in the meat and put more rice on top.
Put on the lid and sqeeeeeeze.
Ta-dah! It's really easy. If you are using leftovers it's no more difficult than making a traditional sandwich.
And look at this clever tab on the bottom to help you pop out the rice ball. So smart.
So these 4 are for tomorrow's lunch. If I could make them faster than he eats them then I could actually try freezing some for future lunches!

Today's Lunch: Starry Salad
It's been a long while since I've posted Spud's lunches. The light is showing up earlier every day making it way more likely his lunches will be considered photo-worthy. Although I've gotten in a bit of a lunch rut lately. Maybe the promise of more sunlight as spring approaches will be just what I need to have some fun with them again. Here is Spud's Goodbyn, known as "Fluffy" to all his friends, filled with today's fare.
CLOCKWISE
· Apple wedges
· Ooops, empty compartment! Could have put a strawberry in there. Or a little lunch note! Monday mornings ... too sleepy to think
· Starry Salad (cuke stars, peppers strips, feta cubes)
· Mini bagel with salami and cheddar, cut in half
· Fork (cheater!)
· Cookie the size of spud's face. I've been told that ALL the kids have these. Everyday. Ha. Somehow we got talked into a pack of these that we keep in the freezer.
